Easy, vegan, cheap, healthy recipe this week! That’s what it’s all about.

 

Ingredients:

-2/3 cup olive oil

-2 onions diced

-1 whole kabocha squash

-1/3 cup liquid aminos or reduced sodium soy sauce

-1/2 cup your choice of chopped nut

-a handful of your favorite chopped greens

  1. Preheat oven to 450 degrees F
  2. Drizzle 1/3 cup olive oil evenly on the bottom of a medium sized baking pan
  3. Dice two onions and put into baking dish
  4. Chop one whole kabocha squash into small chunks and put into baking dish
  5. Chop 1/2 cup of your favorite kind of nuts and add to baking dish
  6. Chop a handful of your favorite kind of greens and add to baking dish
  7. Drizzle 1/3 cup of liquid aminos or reduced soduim soy sauce over everything in baking dish
  8. Drizzle an additional 1/3 cup of olive oil over everything in baking dish
  9. Mix everything together well
  10. Bake in oven for 25-30 minutes. When squash is done it will be easy to poke a fork into
